POWER BREAKFAST
MUFFINS

Ingredients:
1 cup Power Cereal of your choice
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, melted and cooled
2 large eggs
1 cup buttermilk
1 tsp vanilla extract
Optional add-ins: 1/2 cup dried fruits, chopped nuts, or chocolate chips
Method
:
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
Mix In a large mixing bowl, combine your Power Cereal, all-purpose flour, sugar, baking powder, baking soda, and salt. Stir to mix everything well.
In another bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract until well combined.
Pour the wet mixture into the dry mixture and stir until just combined. Be careful not to overmix; a few lumps are okay. If you're adding any optional ingredients like dried fruits, nuts, or chocolate chips, fold them into the batter at this point.
Use a spoon or an ice cream scoop to divide the muffin batter evenly among the muffin cups, filling each about 2/3 full.
Place the muffin tin in the preheated oven and bake for 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
